This will be a traditional foods culinary getaway that you are sure to remember. We will start off with an authentic Italian welcome dinner, then move right into fresh pasta making with Carla, her family and jovial’s local pasta artisans.  There will be three scheduled cooking classes throughout the week, where you will learn to prepare traditional Italian foods as well as foods from Carla’s cookbook, Einkorn: Recipes for Nature’s Original Wheat.

Saturday

Check in starts at 4pm. Once you are settled into your room, come join us for some refreshments and relax and get to know each other.  We will be serving the Welcome Dinner at about 7:30pm.

Sunday

FREE TIME until 4:30 pm

Sleep in, enjoy a relaxing breakfast, rest by the pool and stroll the beautiful grounds at the villa. We will gather in the kitchen in the afternoon for the fresh pasta making class. We will learn how to make traditional Italian pasta like lasagna and fresh tagliatelle.  Dinner will follow.

Monday

FREE DAY

Choose to stay at the villa and relax by the pool, visit a local spa, or travel to your choice of great Tuscan destinations like Florence, Siena, Cinque Terre, Barga, and Garfagnana.  Meals on free days will be on your own, but we will provide you with restaurant recommendations or you can take advantage of our fresh produce and groceries that we will provide you with!

Tuesday

FREE TIME until 4:30 pm

Today is all about learning how to make delicious pastries and desserts from the Einkorn Cookbook.  After a thorough discussion about how to bake with einkorn flour we will then conduct a group bake-off. We will also go over how to start your sourdough starter. The cooking class will start at 4:30 pm.

Wednesday

FREE DAY

The day is yours to enjoy as you wish.   Choose to stay at the villa and relax by the pool, visit a local spa, or travel to your choice of great Tuscan destinations like Florence, Siena, Cinque Terre, Barga, and Garfagnana.  Meals on free days will be on your own, but we will provide you with restaurant recommendations or you can take advantage of our fresh produce and groceries that we will provide you with!

Thursday

FREE TIME until 4:30 pm

This class is dedicated to learning how to bake some of your favorite breads from the Einkorn Cookbook, such as the boule, classic sandwich bread loaf, sweet potato rolls, and focaccia Genovese.  An authentic Italian dinner will follow this class.

Friday

Pizza Farewell Dinner

 In the evening you’ll make your very own einkorn pizza and pick from a number of delicious fresh toppings! We will cook the pizzas together in the authentic brick oven at the villa.

Saturday
